Gluten-Free Rocky Road Cake

1 cup chopped dates
1 ½ cup boiling water
1 ½ tsp baking soda

Mix together and set aside.

¾ cup butter or shortening
1 cup sugar
2 eggs
1 ¾ cup The Grain Exchange Gluten Free Flour
¾ tsp baking soda
½ tsp salt


Cream the butter, sugar, and eggs. Add in the dry ingredients and Blend. Pour the date mixture into the batter and combine well.  Before baking, add the toppings:

Sprinkle each topping in order to cover the top of the cake:
1/3 cup brown sugar
¾ cup chopped pecans
1 cup chocolate chips

Bake at 350 degrees for 35 – 40 minutes in a greased 9 x 13 inch pan.
