Gluten-Free Pie Crust

(Makes a single crust)

INGREDIENTS

2 cups sifted The Grain Exchange Gluten Free Flour
¼ cup sugar
½ tsp salt
½ cup corn oil
4 tbsp ice cold water
½ tsp vanilla
1 tbsp confectioners’ sugar

DIRECTIONS

In a medium bowl, sift together the flour, sugar and salt.  In a small bowl, combine the oil, water and vanilla.  Pour the liquid mixture into the center of the flour mixture.  With a rubber spatula, stir the dough well until it holds together.  With your hands, knead the dough until it forms a smooth ball. Sprinkle the confectioners’ sugar onto a sheet of plastic wrap. Set the ball on the sugar and turn the dough to coat it. Cover it with a second sheet of plastic wrap. With a rolling pin, roll out the dough into an 11 inch circle. Place the dough in a greased 9 inch pie plate and scallop the edges.
