Gluten-Free Ranger Cookies

INGREDIENTS

5 oz butter, softened
3 oz shortening*
1 cup sugar
1 cup firmly packed brown sugar

2 eggs
1 tsp vanilla

1 ¾ cup The Grain Exchange Gluten Free Flour
1 tsp baking soda
1/8 tsp Salt
½ tsp baking powder

1 ½ cup oats
2 cups Rice Chex cereal (broken up)

Add-in options:
6 oz semi-sweet chocolate chips
½ cup M&M’s
1 cup chopped pecans
1 cup unsalted roasted peanuts
6 oz peanut butter chips
1 cup flaked coconut
¾ cup raisins

 

DIRECTIONS

Preheat oven to 350 degrees.  In a large bowl cream together the white and brown sugars , shortening and butter and then add the eggs and the vanilla.   Add the flour, baking soda, salt and baking powder and blend. Fold in cereal.  Choose any combination of the add-in options and fold into the dough.  Spoon onto ungreased baking sheet using a tablespoon or ice cream scoop and bake for 12 minutes or until lightly browned.

*If you prefer, use 8 0z of softened butter and omit the shortening.
