Gluten-Free Peanut Butter Chocolate Chip Cookies

INGREDIENTS

½ cup  butter, softened
¾ cup sugar
½ cup packed brown sugar

1 egg
1 tbsp milk
1 tsp vanilla
1 cup chunky peanut butter

¼ tsp salt
½ tsp baking powder
¾ tsp baking soda
1 ¼ cup + 2 tbsp The Grain Exchange Gluten Free Flour

¾ cup peanut butter chocolate chips

DIRECTIONS

Cream butter and both sugars until light and fluffy.  Add egg and mix.  Add vanilla, milk and peanut butter.  Blend.  Add dry ingredients and mix well. Add in Peanut butter Chocolate Chips and mix to incorporate.  In a separate bowel , pour some white sugar. Using a medium ice cream scoop or Tablespoon scoop cookies.  Roll the tops of the scooped cookies into the sugar to coat.  Press the top of the cookie down with a fork to make a hash mark.  Bake at 350 degrees for 10 – 12 minutes. Yields approximately 2 ½ dozen cookies.
